Tortillas

2 1/2 cups flour
1 tsp baking powder
1 tsp salt
3 tbsp oil
approx 3/4 cup warm water

Mix dry ingredients, add the oil then slowly add warm water to make a soft dough. Knead for about 5 minutes then let it rest (makes it way easier to roll out). Divide dough into 10-12 pieces and roll out to about 20cm round.
Cook them in a very hot, lightly oiled pan for 30-60 seconds til they bubble and start to brown (or pop them in a snadwich press). Turn and cook the other side then wrap them in a damp teatowel to keep soft.
These freeze well (freeze in meal size batches) and to easy to heat just wrap in foil and pop in the oven.
