How to make your very own SOURDOUGH STARTER!

Find a container - preferably glass, next best option is crockery, plastic if you absolutely have to, but not metal of any kind. I use a canning jar for this first step. Use a spatula or wooden or plastic spoon to stir starter - again avoid metal of any kind.

Step 1.
Take a quarter of a cup of flour and place in container. Take a quarter of a cup of warm water and stir into flour. Scrape down the sides of the container, cover with a breathable cloth i.e dishcloth, nappy liner (clean ;)), etc. Leave for approx 12 hours.

Step 2.
Check your starter for bubbles (which is why a glass container is best). See any? Yay if you do!! Don't panic if you don't!! Add 1/8 cup of flour and stir vigorously then add 1/8 cup of warm water and again stir vigorously. Scrape down sides, cover and leave for another 12 hours.

Step 3.

If your container is getting full then scoop some out and chuck it in the compost. Add 1/8 cup of flour and stir vigorously then add 1/8 cup of warm water and again stir vigorously. Scrape down sides, cover and leave for another 12 hours.

Continue to do this til your starter is nice and bubbly (could be 3 days could be 5) then voila you can start cooking!!!! I feed my starter once a day and keep about 4 cups of starter available at all times. I make sourdough pancakes every morning for my family and sourdough pasta generally once or twice a week.
